I recently discovered that I can use vlc as an encoder and I would like to convert some 1080p that I have in x265 HEVC. […] when I try to convert a movie to h.265 it does not give me the option to use that codec […] Can I use VLC to convert h.264 to h.265?

x265 is not enabled in the HMI yet. If you want to use it, you should use the command line interface of VLC for now.
Welp, it's September 2020 now, and I just came to the forum today with the same problem that murrubioflamenk had two years ago: "HEVC" or "H.265" does not appear among the options available in the "Convert & Stream" dialog » "Video codec" tab » "Codec" pop-up selector. In my case, I'm using VLC v3.0.11.1-Intel64, on a 2018 Mac mini, running macOS Catalina v10.15.6-19G2021.
Is there a good reason why H.265 still "is not enabled in the HMI yet" more than two years later? I would think that HEVC encoding would be a very frequently-used feature. Thanks.
