I'm getting similar behavior to the OP, with the exception that I'm running from the command line instead of the GUI, and I'm specifying individual titles from the DVD. If I try to convert only the first title (using "dvdsimple:///i:#1-1"), it works. If I try to convert titles 2, 3, or 4, ...
