how to convert an ISO file to FLAC or MP3?

i found explanations on the net
(convert > file > convert > mp3 > ...)
but it never works!? vlc does not do anything...

1) i unchecked ALL choices (to be sure) and now, finally, the conversion does not start again, phew!
btw, there are like 15 choices for "playlist" when 2 or 3 would be enough!
