I would also like an option to change the default behaviour of the Apple Remote controller in VLC. The left and right button are perfect for 10second/30second/1minute jumps in a video (how big a jump would be for the user to decide in the preferences).

Because the submenu for opening a file ( File -> Open File... ) and the submenu for opening subtitles ( Video -> Subtitles Track -> Open File... ) have the same name, you can't make a keyboard shortcut for opening subtitles in the Keyboard Shortcuts panel in MacOSX System Preferences. Autodetecting external subtitles also doesn't work with me.
I'm running Version 1.1.0-rc on latest OSX Snow Leopard.
