Show all Settings and then select Input / Codecs. Inside those settings there should be a 'Subtitles track' and 'Subtitles track ID' setting. Set both to 0, Save, restart VLC, and subtitles should be off by default. Wow, that's a lot of work to go through for something that should be the Default se...
