In the web interface you have to save the http streaming/video codec/audo codec stuff for every file you want to play. So when you browse to another file you want to add after you set up the first one, click save for the other options. Rinse and repeat.

I don't really have an answer for you but, I've found VLC to not exactly be a cure all solution to transcoding video, especially for newer video standards. Play the disc, when you get to the sound byte you want go to Start, Accessories, Entertainment, Sound Recorder. I think you can record up to 60 seconds at a time. Or use Audacity. I don't think I've heard of anything specific to video to capture audio only. But the easiest route is as I mentioned.

mp3 playback should be a simple task for vlc. I have not had a problem with it ever. I would suspect a network issue or computer issue over a vlc issue in this circumstance.
