By accident ("Simple settings", usually I have "All settings" on), I found now the possibility to change the Mouse wheel binding the way I like it.

You guys are kidding?!? The new Player has some nice features I long missed in the old version. Thank you very much for this! But... Not being able to disable this mouse wheel/volume function is just not suitable. It's against the whole philosophy of the VLC-player. Every hotkey should be changeable...
