VLC's behaviour seems to be to act in the same way the rest of video players do, using the logical resolution of the screen (which is ordinarily lower than the physical one — half on each dimension by default for Retina displays, I believe — which is why the videos appear larger that you would like)...

Using a single machine, If I configure Kodi 17.3 to act as UPnP / DLNA server, VLC (both the 2.2.5.1 release and recent 3.0.0 nightlies) can browse and play its contents; testing this would seem an easy first test to check that your macOS VLC can talk with that particular UPnP / DLNA implementation....

Disabling hardware decoding as proposed is indeed a workaround for the described issue (as well as the one mentioned in the footnote).

I believe that when you transcode using an MP4/MOV encapsulation the .m4v file is an MPEG-4 (part 14?) container, so if the operation was successful, simply changing the extension to .mp4 might work, as long as the output video and audio formats are readable by Final Cut Pro.
