If I open a video and change its speed immediately, using keyboard shortcuts, then the audio gets out of sync. If I wait a few seconds before doing so, then there are no problems.

Video playback is probably delayed until the interface is fully shown, because... well, you need a window to show a video. For audio playback you do not need to show anything. I have a .mp3 file on my Mac. I right-click -> Open With -> VLC.

The VLC interface is hidden until I click on another app, like the Finder, then back to VLC. The interface should instead be visible immediately.

This started happening since upgrading to 2.2.0.

Yes, as I said this is expected. We changed the volume slider so that at the very right the volume is at 125% by default.
