Could you confirm that you are facing two issues which are:

- VLC-iOS does not save last selected audio track
- Cannot select default audio track by language

This is correct

I had a quick read through of the wiki on how to customise the app and it said that VLC remembers the last audio track that was chosen, however I don't find this to be true. Is there any way on iPhone to set a default audio track for files with multiple audio tracks?
