Yes VLC supports multichannel video, but I don't know how you can encode them.

Supposedly you dont need to use anything else other than VLC.

Multichannel video support
Hi, I'm wondering if VLC supports multichannel video. I remember blu ray disc and DVDs players that have support for "Angle" to watch the same video from a different point of view. Like a secondary video for the same audio. Can I play such videos with VLC? Can I encode such videos with VLC ?
