There is no known open bug related to play / pause, or any additional report, for exactly the version 3.0.11.1, as of now. The update did not fix this issue for me.
Mac OS 10.13.6, VLC 3.0.11.1 Vetinari (Intel 64bit)

Pausing or scrubbing video or clicking timeline to jump is extremely likely to cause a crash of VLC.

This was a bug supposedly fixed in the 3.0.11 update - but it seems it wasn't fixed fully, as it still happens - but not as often. Sorry, that isnt too helpful. What do you mean?
Do you mean use the "Convert/Save" option? That is giving me a video which has very blurred/mixed frames which is unwatchable. I have tried several presets like ipod, youtube SD, mp4 but all result in extremely overlapped frames.
