Short answer - you cannot output advanced audio formats via bitstream under MacOS. It was reportedly possible on the Intel Mac Mini's if they were running Windows, but MacOS doesn't support output of more than 5.1 in bitstream. I just realized, you didn't explicitly say that sharpening is being done by the GPU instead of the CPU. Back in 2018, I read that VLC was doing sharpen filter in CPU after decode by GPU.

Has that changed in the current build to using GPU to perform sharpen?

Well, at least you confirmed it is using the GPU for sharpening rather than the CPU. This leaves hope that a Mac Studio Pro or Ultra might be able to sharpen 4K without frame drops. Here is the log file from playing a 4K movie mkv. Sharpening is on. I can see the sharpen filter being added to the chain. Also, I see the frame drops in the latter portion of the log. Yes! The fix in nightly build works. No more having to manually set audio output device after every VLC launch.

This fix has made VLC much more pleasant to use with an AV receiver.

One other gotcha.... The Mac is likely to refer to 2 channels if it ever goes to sleep or receiver is set to HDMI pass through while on standby. Yes, something in 2.1.0's new video processing chain is causing it + sharpen to take much longer to render frames. If anything, 2.1.0 on a Mac now increases the minimal CPU needed to play back with sharpening to something like a 6.0 GHz quad core - something that isn't in any existing Mac. For now, ...
