I suspect it can only record the raw stream as converting on-the-fly is too processor intensive and can't be done in real time. You will have to manually convert the files afterwards via the media -> Convert/Save option.

Have you tried reinstalling an old version? If you go to the downloads page and select your operating system you can choose older versions via a link near the bottom of the page.

I'm not sure what you mean by "record files in VLC".

The converter dialog has a destination file name & profile, which you use to specify the output format. I can only test it with capturing the screen though or converting a file, hence my confusion about "record files".
