How to pick an audio track for transcoding?

I'm using VLC to transcode an MKV video with multiple audio tracks into an MP4 video. I just want it to encode one audio track. How do I do this? I've tried using --audio-track=2 on the commandline, but it still transcodes *all* the audio tracks!

Anyway, I tried it with dvdsimple and interestingly it does dump out Title 1 of the DVD, but then instead of quitting it seems to restart the dump and add more data to the output video file! Do you have an idea why? Here's the output I get at the command line: jez@jez-MINT-PC ~ $ vlc -vv dvdsimple:/...

But what about just playing the DVD? Any idea why you wouldn't be able to select English audio?
