The way I do it: while watching the vid I pause it at the point I want VLC to remember. I make note of the time mark below the volume indicator, then jot this time down on a piece of paper. Next time I open the vid I go to Jump To Specific Time (CTRL + T), enter the time I want to go to, and hit go....
