stream to file speed settings

I often use vlc as a file converter for various media and all the tutorials and little tricks i have found have still not solved the most infuriating issue i have expirianced SPEED. so far everytime i convert a media file by streaming to a file i have to wait for the damn thing to play through in real time and with a 2.5 ghz dual core and sata harddrive capable of processing and transferring gigs of data fairly quickly this is a colossal waste of time. does anyone know how to set the stream to file option to go at a quicker speed.

This is automatic and it has been so for almost as long as VLC as been able to stream/transcode.

VLC goes real-time if something in the chain requires it, such as if you are streaming to the network, reading from it, or watching the video at the same time as you're transcoding.

so how do i set it to transcode without watching it

You don't click the relevant checkbox (Display) from the wizard or you don't use display in your manual --sout chain.
