I look for the list of all the Payload Types which VLC can use for exchanges RTP. Do you know where I could find that??

On the sending side, the most accurate way is to read the source code for modules/stream_out/rtp.c. There is also a list on the official website, but it cannot be accurate due to simplificity and multiple versions: http://www.videolan.org/streaming-features.html
