By color management I mean if VLC takes the colorspace of the video to be played (using embedded profile or assuming sRGB is untagged) and maps it to the iOS display for accurate colors.

Yes, this is provided since the 3.0 release. Note that VLC currently does not support HDR on capable displays, but will downsample to sRGB.
