How to set default audio device

Windows 10 Pro | VLC v3.0.0 Vetinari | Sound Blaster Z Audio Card | Sony STR-DH550

The PC (Sound Blaster Z) is connected to the receiver by SPDIF cable, and works great when the audio device is set manually to "Speakers (Sound Blaster Z)" in VLC, but VLC defaults to "SPDIF-Out (Sound Blaster Z)" on restart?

I've looked at "Tools>Preferences>Audio but I don't know what I'm doing - Help Appreciated, IM
