How to pick an audio track for transcoding?

I'm using VLC to transcode an MKV video with multiple audio tracks into an MP4 video. I just want it to encode one audio track. How do I do this? I've tried using --audio-track=2 on the commandline, but it still transcodes *all* the audio tracks!
