Help with audio tracks

hello can someone please tell me:
1. how can you edit your subtitle and audio in VLC - (I mean that instead of "track 1" and "subtitle 1" it will be written "track-english" and "subtitles-english")?
2. after I have added the subtitles and audio track, VLC doesn't save the whole project and when I reopen the movie I need to re-add the subs and audio track. How can I save the whole project so that I won't need to re-add the subs and audio track?

1) depends on the format. It should be in the metadata.
2) use a video editor.
