How to stream or convert from a DVD to a MP4/Mov file?

Is there an "Ending Position?" When you click on Files, Open Media, Stream or Convert, and then Starting Position: Add Title/Chapter. I don't want to stream the entire movie. I only want is the parts or chapters. How do you end it?

And finally, How to transcode your movie files?
