Via Tools -> Preferences (Show settings: All) and setup the filters via Video section.

I want postprocessing to remain saved (at level 6), but every time vlc starts this option appear to be disabled.

You have to enable the post processing filter from Preferences and Video (Video output filter module).

Finally... i found the right filter.
Tools - Preferences - Show Settings - All - Video - Filters - enable Video Post Processing Filter
