There is nothing to install, FluidSynth is already built-in by default in VLC.
However, there is no SoundFont file, you need to provide one and to set it up like this:

... is probably going to be very expensive). That said, you are free to pick a better and proprietary sound font than whatever you currently have. FluidSynth is not good or bad as such, it's all down to the quality of the sound font. So I don't see the point in moving away from FluidSynth.
